Indian Haddock Curry

Ingredients

  • 5 fillets of a white fish
  • 6 garlic cloves
  • 1 onion
  • 1 can diced tomato
  • 3 cups green beans
  • 1 bunch of cilantro
  • 1 can coconut milk
  • 2 pieces Naan (or tortilla)
  • 3 Tbsp curry masala

Directions

Prep:

  • Mince garlic
  • thinly slice onion
  • roughly chop cilantro

Curry:

  • fry onion and garlic in large pot
  • add curry masala
  • add tomatoes and coconut milk and bring to boil
  • reduce and add green beans and fish
  • simmer for 6-8 min

Toast the bread (optional):

  • in a large pan heat some oil
  • heat naan for 30 sec per side
  • heat tortilla for 15 sec per side

Serve:

  • on rice or in bowl
  • sprinkle with cilantro
