Indian Haddock Curry

Ingredients
- 5 fillets of a white fish
- 6 garlic cloves
- 1 onion
- 1 can diced tomato
- 3 cups green beans
- 1 bunch of cilantro
- 1 can coconut milk
- 2 pieces Naan (or tortilla)
- 3 Tbsp curry masala
Directions
Prep:
- Mince garlic
- thinly slice onion
- roughly chop cilantro
Curry:
- fry onion and garlic in large pot
- add curry masala
- add tomatoes and coconut milk and bring to boil
- reduce and add green beans and fish
- simmer for 6-8 min
Toast the bread (optional):
- in a large pan heat some oil
- heat naan for 30 sec per side
- heat tortilla for 15 sec per side
Serve:
- on rice or in bowl
- sprinkle with cilantro
