Chipotle Black Bean Soup

Ingredients

Soup:

  • 3 Tbsp Butter
  • 3 sweet pepper
  • 2 large onion
  • 1 can tomato paste
  • 3 cans Black Beans
  • 3 cups broth (or water)
  • 1 Tbsp Cumin
  • 1 Tbsp Chili Powder
  • 1 Tbsp taco seasoning
  • 2 tsp Oregano
  • 1 1/2 tsp salt

Toasted Tortillas:

  • 6 tortillas

Yogurt topping:

  • 1 lime
  • 1 cup yogurt

Toppings

  • 1 1/2 cup shredded cheese
  • bunch of Cilantro
  • roasted pumpkin seed

Directions

Prep:

  • small dice onion
  • cut pepper into 1/2” pieces
  • zest and juice
  • roughly chop cilantro

Soup:

  • heat 3 Tbsp butter in large pot on medium
  • add onions and peppers and cook 5-6 min until golden and soft
  • add spices, tomato paste and toast (~1 min)
  • add black beans + liquid, salt, stock and bring to boil
  • reduce and simmer for 10-12 min

Toasted Tortillas:

  • make two grilled cheese using tortillas in a large pan

Yogurt topping:

  • mix lime zest, lime juice, and yogurt

Serve

  • Serve soup in bowl
  • sprinkle with cheese
  • add a dollop of yogurt
  • sprinkle with cilantro and pepitas
