Ingredients
Soup:
- 3 Tbsp Butter
- 3 sweet pepper
- 2 large onion
- 1 can tomato paste
- 3 cans Black Beans
- 3 cups broth (or water)
- 1 Tbsp Cumin
- 1 Tbsp Chili Powder
- 1 Tbsp taco seasoning
- 2 tsp Oregano
- 1 1/2 tsp salt
Toasted Tortillas:
- 6 tortillas
Yogurt topping:
- 1 lime
- 1 cup yogurt
Toppings
- 1 1/2 cup shredded cheese
- bunch of Cilantro
- roasted pumpkin seed
Directions
Prep:
- small dice onion
- cut pepper into 1/2” pieces
- zest and juice
- roughly chop cilantro
Soup:
- heat 3 Tbsp butter in large pot on medium
- add onions and peppers and cook 5-6 min until golden and soft
- add spices, tomato paste and toast (~1 min)
- add black beans + liquid, salt, stock and bring to boil
- reduce and simmer for 10-12 min
Toasted Tortillas:
- make two grilled cheese using tortillas in a large pan
Yogurt topping:
- mix lime zest, lime juice, and yogurt
Serve
- Serve soup in bowl
- sprinkle with cheese
- add a dollop of yogurt
- sprinkle with cilantro and pepitas
